Title: Xmas party smoke begins
Post by: westexasmoker on December 14, 2008, 12:05:32 PM
Works christmas parties are this week, so it was time to get crack-a-lackin!  Already have the cheese smoked up and vac-sealed for the past 3 weeks.  Onward!  Some Jalapenos for ABTs!

All cored and happy, we'll come back to these a bit later in the week!

Some of habs CB, drying about to go into the smoker (this was last night) forgot to get the after pic hit 150 IT and pulled....now all vac-sealed for later this week....Don't worry I'll get a pic!

Time for Kummok salmon, all sliced up and ready for the brine!

After the brine last night and now drying gots two other racks full on the other side of the counter, where we're at right now.  Almost time to go into smoker!  And yes LQ I'm using mesquite!  ;D

I hear ya WTS.  It warmed up to about 37F but both yesterday and today we've had the wind a howling!  If I ever get down to ZZ Top country, you can bet I'll be knocking on your door!

Salmon from last nights smoke, a little overcooked but still smells/taste great!  Time for a vac seal, I would have done this last night, but Jim Beam took over my camera and could not figure out how to work it!  ;D

Tommorrow time to trim the brisket up!

Ya know WTS, I had the same thing happen, and don't understand. Had some people over for some eats, 1 Bradley and 3 Big Easys, and somehow did not get 1 pic. Is there something in the Beam that makes yer camera go dead? I think this could be a class action lawsuit or something. We gotta lookout for ourselves!   :D ;D

Hay WTS, everything looks fantastic.  Your a working machine with that BC.  I would love to make some of those ABT's.  How long did you smoke those Jalapeno's and at what temperature.?  Also after wrapping with bacon how long smokeing and what temperature?

Thanks Tom,

The jalapenos were still raw after being wrapped in the bacon, although I kinda like the idea of a bit of smoke on the penos and they wrap!  This batch was in @ 220 right at about 3 hours!

Finally got done last night....turkey all rubbed and injected and off to the smoker

After 2 hours smoke and 6 hours in the smoker

Then it was off to the big easy to finish, took about 1 1/2 hour...Did'nt get the finished picture of it the kids showed up with the grandbaby and the camera was taken away!  ;D

Did squeeze in some drumsticks for dinner though!

All in all its been quite the marathon, but everything was a hit yesterday at my works party and hopefully today will go as well at the wifes!  Now I've got to figure out sonething for dinner tonight!   ;D

Thanks WTS,

She is so beautiful.  How is she feeling?

I almost had a housefull of little ones this week.  I have a friend in NH that still doesn't have power from the ice storm last friday.  She has  3 kids -  6, 4 & 1 1/2 year olds.  They are my little buddies & are a lot of fun.

What a cutie, WTS.  Man, I miss them when they're that age....no talking back, no chasing them.  But, alas, they do grow up.  Now just gotta wait for mine to give me grandchildren.  Course, the oldest is 16 and the youngest is 7 so I don't want them too soon.  I'm sure you cherish that little one, WTS.  They grow up too soon.

Shot gun in one hand with a few dead ducks in the other does a pretty good job on the boy friends SD.   ;)

Thanks Giz!  I've only had one goal with raising my one and only daughter:  Keep my baby off the strippers pole!  Course, if I don't get a job soon, Momma may be headed there sooner rather than later.  ;D

I'll tell you what......I'd rather raise ten boys than one girl.  I don't mean this to sound crude, but with boys, you only have to worry about one peenis.....with girls you worry about 1,000 of them.  I really don't mean to offend anyone with that statement....it's just so true for me.  I remember what I was like growing up..............unfortunately. :(

I really meant it when I didn't mean to offend anyone..........I worry sick, LQ.....that's my baby!  I guarantee you when she gats married, I'm gonna be bawling the loudest.  Never had any sisters growing up and she's my only girl.  I am wrapped so hard around her little finger, I resemble a ring.

Yes, you can, LQ......anyone else and I get madder than a legless Ethiopian watching a donut roll down a hill.  But, not you  ;D

I'll take that as a compliment Giggles...legless people chasing donuts and the hill...ok...(was quite funny) but...we should never make fun...it's not right...but also...it's not right...try to behave my friend...  :)

Comparatively speaking, the legless hungry guy is way ahead of me.....however, I'll try to behave because you asked so nicely  ;D

Got hit up after the party last week if I would mind smoking a couple of briskets for one of my co-worker, thats a silly question!
All rubbed up and rested overnight, waiting for the smoker to come up to temp

3 hours of smoke and total of 6 hours in the smoker

Boated up and into the oven overnight @ 220, total cook time 20 hours and FTC'ing as I type to be delivered on the way to work today!
