Title: Mikey's smoked catfish spread

I guess not technically a non-smoked recipe but here goes

Smoke catfish filets
For each 8 ounce block of cream cheese I use either one or two smallish fllets of catfish (those frozen ones at Sam's are great)
Bring cream cheese up to room temperature or higher in the microwave (easier to mix)
Add a tablespoon or two of good (non-sweet) mayo or sour cream
Add a couple tablespoons or so of good EVOO
A few dashes of hot sauce or jalepeno juice
Add some salt if needed
cracked black pepper to taste - I like a lot
Granulated garlic to taste - I like a lot
Tablespoon or two of dried onion flakes
Teaspoon or two of cajun spice (I use my own concoction - but Essence does pretty good)
anything else you want to put in that makes sense including dill, cilantro, bacon, chipotle, oregano, thyme, etc....(no mango, pineapple,
     coconut, chantrelles, foam, etc... this is Southern Food)
Firm up in refrigerator
Spread on crackers and enjoy!

Sounds flavorful Caneyscud!  Catfish can be a little tough to come by where I am at but I am thinking some smoked halibut or rockfish would do just fine for replacement.  Maybe even some smoked scallops or shrimp, thanks for the recipe and for stirring the taste buds!

Stillsmoking - actually halibut is the fish I used the first time with this.  But as halibut is hard to come by here in Tennessee I went to catfish!  I'd love to try the "rockfish" myself sometime - have not been able to fish for them yet.  We have some "rockfish" around here, but it is only a misnomer for a Striper.
