Hey WTS,

Would you ever consider doing the big garlic thing you do with this cut of beef?

I think the garlic plan sounds good! But like just the simple black pepper crusted.....we'll see!

Screwing the red lightbulb in the deers nose as we speak. As soon as the winds die down and flight plans clear the home office. I will be enroute. Save me a platter.

Wow WTS!

I keep changing the menu for xmas day but I think your post just finalized it.  Prime rib for us.   I think I'll do garlic and black pepper

Thanks,
Deb

WTS, I'm jealous that is well over twice that price in Cali, maybe three. I picked up one at Costco and then looked at the price, it was like 80 bucks and not so big. Did not get it! Headed for the pork roasts instead.

Did a 2.5 lb one the other night, all seasoned up with pepper

After 1 hour of smoke at 220

And then into the rotisserie for 33 minutes

Wrapped up tight in foil and rested in the fridge for two days then reheated for 1 hour at 220

All I can say is OMG, this just melted in your mouth like butter!
