Title: Brisket time again!

Thought I'd do some brisket for the folks that helped us out this Christmas!

All trimmed up yesterday then covered with rub and into the fridge for an overnight rest!

Out of the fridge and resting while the smoker comes up to 220!

Off to the smoker and time to head off to work.....We'll see where were at this evening when I get home!

You sure are lucky that I can't drive down there by the time you get done with work.........I'm a brisket burglar  ;D

Thanks for all this Brisket talk, I got one on reserve from the Butcher Block for Tuesday pickup.  Will rest in fridge till Saturday smoke

Its an 8lb'er  How long you think that will take in the smoker.  expect 5 hours of smoke (Mesquite likley wood type).

I've got to do another brisket soon. Would be great while watching the football playoffs.

I've been hankering to do a brisket for a while now......maybe Momma will let me pick one up tomorrow.

I'm in the same boat Duck. Been wanting to do one just can't get up to using messy wood though. I need to just go buy one and give it a try. Hopefully mine turns out as good as what WTS' does.

Just got home....right at 6 hours in the smoker with 2 hours smoke tower hovering @ 200, looking pretty good deceided for 3 more pucks then time to pull and boat!

Looks GREAT WTS..

I've got a couple of briskets on the schedule for a new years eve smoke, I'm going to use the JB-Oak Bisquettes..

Making progress..7 hours in the smoker, 3 hours smoke!

Time to boat up....I've quit putting any extra liquid in, keep the fat cap on top, cover with heavy foil and get plenty of juice...Oh yeah, and put a tray below in the oven unless ya like cleaning up a big mess!  Off to the oven @ 220 for a nights rest! 12-16 hours from now....Now you can finish this up in your BS, the principals are still the same because we're talking cook time not smoke time.

IKW asked about an 8 lb.er, probably about the same, butt and brisket vary so much its hard to pin down a time, but I always err to the long side and gots, to gots to do at least 2 hours of FTC.....Till tommorrow!

Oh yeah something else I've learned.  We bought a new oven and it has a "Safety" feature where it turns off after 12 hours....go figure, gotta keep an eye on that!

Mine does too.  It sucks when you think your pork butt or brisket is happily cooking away and the freaking oven is off.  I think there is a way to turn the feature off but I haven't looked in the book yet.

Deb, I just make sure to restart right before I go bed (barefoot and with a T shirt......sorry could'nt resist)  and then when I wake up in the middle of the night....ok I'm getting older, and reset it again!  Funny, took me a couple of nights asking the better half, 'Why did you turn the oven off' to 'I did'nt'!  ;D

looks great.  I am going to shoot for an 8lb'er  4 hours smoke then leave it for another 4 hours.  Total of 8 hrs.  Hopefully its close to done by then.

Looks delicious, If I hadn't just ate lunch I would be drooling.  Ah who am I kidding Im still drooling.

I didn't have to put a big pan under mine to catch the mess, but I think it is because my boat pan was so big. Next time I am going to try to use less or no liquid in the boat.

I'm starting to see a correlation between smoking with mesquite and leaving things a bit longer than wanted  ;D  Maybe something in the by-product of the mesquite smoke releases a tryptophan-type symptom  ??? ??? ;D

Mesquite also makes the door fall off of Bradley Smokers. ;D  Sorry about your misfortune WTS.  The brisket looks good anyhow.
