For anyone looking for a GREAT idea I tried Habs Pastrami...........WOW! Family and friends said it was better than store bought, and asked if I would make more for them. I used Alder & Apple, I had a challenge with grinding the pepper corns, but even with that little challenge it all turned out GREAT!

Made one with venison backstraps this year....made me a hero at deer camp this year.

I've never thought about using a blend of Alder and Apple. I will have to try that next time. I'm glad that it turned out alright for you.
