If you are going to use chicken I'm pretty sure you would have to use thighs for the fat content or use some other source for fat. If you find a recipe please let us know how it turned out.

Interesting idea for sure... I would use yellow skin chickens for the fat content... please advise when you find something. I would like to try this out myself.
