I'd love to come to the home state again......never get back as much as I'd like.

Are you getting snow now or still freezing rain?

You will need some casings. snack stick seasoning and spices, some sort of stuffer, cure, and some basic knowledge of safe sausage making.

Im sure i left something out.

The Northern Tool 5lb stuffer works pretty good from what others have posted, and is about $100.  The Cabelas, I have the 11 lb, are bigger (11, 20, 30 lb models) so you don't need to refill as often.  SausageMaker also has some bigger ones.
Suggest you buy a kit like NePaSmoKer said for the first batch.
I get my spices and casings from here:  http://www.friscospices.com/ (http://www.friscospices.com/).  For beef sticks, I used 21mm collagen casings.
Here's a few other places to buy spice kits.
http://www.sausagemaker.com/ (http://www.sausagemaker.com/)
http://stores.curleyssausagekitchen.com/StoreFront.bok (http://stores.curleyssausagekitchen.com/StoreFront.bok)
http://www.eldonsausage.com/ (http://www.eldonsausage.com/)
http://www.butcher-packer.com/ (http://www.butcher-packer.com/)
Also, read the Sausage board above, and you will see lots of great info.
And of course, that Search button will find all sorts of great info.
The book, Great Sausage Recipes and Meat Curing by Rytek Kutas is a must-have.  Lots of how-to, and recipies.  But a spice kit for the first go would be a great idea.
