Adam Marianski's site is a winner

He has helped me every step of the way with the triple smoked bacon recipe.
I have his book "Polish Sausages" which deals with basic smoking and authentic recipes and instructions to producing. Some of the recipes use hard to find meat ingredients but they are in accordance with the Polish governments Meat Dept.. He tried for years to get the manuals that were for internal use only. Interesting book.
