Thawing 12 lbs of venison for some snack stix tomorrow.

that is absolutely awesome! i am sure that will be much appreciated.
before i get to rambling i did not take the opportunity to serve, (regret that now)
but i have friends and family..... as we all do that are serving our great country now and anything
we can do in support of them commands respect.

I didnt serve either. Right out of high school i went to work for Northrop Aircraft Div and ended up in the B-2 Div.

Both my sons and daughter in law are at Ft Bragg and my oldest daughter is out of Ft Mead MD. My wife was USAF.

Is Lance Cpl Warren your son?

My usual wood is hickory but i want to try something new. How about maple, mesquite, alder or pecan?

I've used maple on my venison jerky and it was good!

i am chomping at the bit to try some snack sticks but it looks like
it will be a couple of weeks before i will have the time.
do you use a natural casing?

Its ok, the loss of any member in war time is tragic.

I use collagen for stix and hog or sheep for other sausages.

I have like 5 different venison stick recipies, don't know which one i will use yet. I prob wont get to grinding until tomorrow sometime after i get back from the surgeons office. But i will post the one i will use for ya. Making 10lbs, 8 lbs venison, 2 lbs pork butt for fat.

Cabelas has a couple of nice inexpensive grinders.

Does your wife have a KithchenAid mixer?  If so, they make a meat grinder attachement for about $50.  I've made several batches of summer sausage and brats with it.  I could grind about a pound a minute. 
But I upgraded to a 1/2 hp Cabelas commercial model w/ some Christmas money.  Wow, it grinds!
Now I don't need my KitchenAid attachment.  Maybe I can sell it here (but I don't know the rules for selling on this site).
Also, Northern Tool sells what looks like a good grinder--lots of 5 star reviews, so look at that one too.
Trust me, you'll love the taste of homemade sausage.  Be selective at what you buy, so you don't lose too much money when you upgrade to better stuff--trust me, you'll want to.

I use 19mm collagen and for natural i use hog 32mm. Come on over but you might have to park at the bottom of the dirt rd cuz we are supposed to get some heavy snow tonite.

Here is how the stix are progressing.

2 hours dry time.
2 hours @145* to sweat.
2 hours in the smoke @145* They have 1 hour left @145* then bumping to 165* with smoke
