Sirloin steak smoked for 1 hour then tenderized (ok beat with a hammer) and cut into strips and into some buttermilk, egg with some black pepper to rest for about 30 minutes

Then dipped into flour with seasoning and fried till nice and brown, drained on your favorite paper bag

WTS, where I come from they call those finger steaks but you nailed them. Oh my god that looks good and mashed potatoes are just right! There was a place where I grew up that made it's reputation and living off finger steaks for a good many years. People came from miles around for what you are making, nice work!
