Made a nice little roast for dinner last night. Smoked with 2 hours of mesquite then 3 more hours @ 220

Then it was off for 3 hours simmered in beef broth, nice moist and melts in your mouth!

I don't remember for sure, either an arm or a sholder roast...it had been ageing in the back of the fridge for the past month. Usually I'll note on the vac-seal bag what cut, but alas this one escaped me.

I'm gonna have to go to the WTS school for beef. Seems I can never get beef just right. My brisket I did for the Super Bowl came out pretty dry (for my tastes) and I even boated the thing. You gonna have a school coming up soon, WTS?

Thats funny SD! I can pull beef off everytime, but when it comes to pork (unless its ham) never comes out to my liking.....So you can do the pork school (or here of late the spice school) and I'll do beef! ;D

Awww..grasshopper one must have a teabag swinging that has the reverse effect! ;D (mesquite on...mesquite off, although that never worked)
