Title: Jerky

I just finished slicing and seasoning 19.5lbs of beef eye round roast. Into the fridge until Saturday morning when it will all (hopefully) go into my new Cabelas 80L dehydrator.

Pics to follow, as soon as I find the memory card reader....  ???

The kids will take care of that. They are studying to be "food vacuums" and my son has invited 9 over tonight for an all-night xbox / lan party.

FLBR,

That dehydrator is killing me. Man I want one of those! Looks like a great set up. My kids go nuts for the jerky too.

Got to agree, the jerky looks great but right now my eyes are on the dehydrator.  ;) :)

That was 14.5lbs of Jerky. I had 2 racks left, but I was not going to get the other 5lbs in, I'm getting ready to put it in now.

It did not get up to (the set) 160F temp with that load in it even after 6 hours.

I usually start mine in the Bradley using 8 racks for 1 hour, 20 minutes of smoke, then transfer to the dehydrator (same as yours). I usually run 2 loads through the smoker, around 7 to 8 lbs each. Once each load is finished smoking I put them in the dehydrator. Of course they finish at different times but I have never had a problem with temps. This may be because the jerky is sort of pre-heated from the smoker. Also my dehydrator is in my heated garage (room temp).

For the second load (the remaining 5lbs) I pre-heated the dehydrator and put the racks in as I filled them instead of all at once.

I'm going to smoke a batch of jerky, but the thought (and mess) of having to take the jerky off the Bradley racks and onto the dehydrator racks does not appeal to me in the least. I guess I could put the Bradley racks on the dehydrator racks.

you got a full load there. What i do on my cabelas dehydrator is get it to tem while i am loading the racks. This helps sometimes.

The second batch was done in about 3 hours. I pre-heated the 80L and loaded the racks as they were full.

If you look at the pic you can tell the "kicked up inferno" from the "garlic and pepper"
