We are going to smoke some ribs and a fatty tomorrow.
Here is the Fatty:

We filled it with spicy, marinated mushrooms, Habs pickled eggs/ jalapenos/onions, and a couple (sliced up) smoked mozarella sticks. We then rolled it in bacon:

It is chilling overnight, and we will smoke it and then post the results.

They, too, are in the 'fridge and will be smoked along with the Fatty (on the top shelf) - because those drippings sure will not hurt the ribs.

OMG! That looks exquisite! I've been wanting to do pickled eggs/jalapenos/onions. I must admit though that I'm not a fan of mushrooms. :D I would eat them though if they were stuffed in that masterpiece!

Holy bat-$$it batman. That looks amazing. This takes the Bacon Explosion to a new level. More Gourmet I guess. A challenge to the outside to inside healthy wise maybe. The Inner level (Mush, Onion, Peneo, Egg) sounds good for a salad with warm bacon dressing... hmm.
I've never made a fatty, but this one had peaked my interest. This has been placed on my to do list.

My bacon explosion did not make it into the smoker yesterday. It will this afternoon.
FLB, you got us inspired to do the Fatty when you mentioned it was in your plans..........we are still waiting for YOUR pictures. ;)
P.S. we are still kind of wet behind the ears on this stuff, so how long should we smoke this Fatty, and at what IT should we pull this?
Nick, the pickled egg recipe is Hab's. LQ, the pickled eggs are very good! Trust me, I was uncertain of them, but they are a little sour, a little spicy, and just really good!

I love pickled eggs. In my younger years most bars had peanuts, pickled eggs, and pickled pigs feet on the counter - free for any paying customers.

I had to pay for my pickled eggs at bars; $.25 each.
If you don't like them too sour increase the amount sugar next time. I like them on the sour side, it's a good excuse to drink more beer. :)

OH MY! It is fantastic - it definitely has the "pungency" from the pickled eggs/jalapenos/onions, and is it ever GOOD!!!
We just split a slice; now we are heading back to the kitchen for MORE!

Gotta love it! Pickled eggs in a fatty...YUM! Most California folks don't even know what a pickled egg is. Lots pf possibilities with Fattys.

That is the best looking fatty I have seen!
Pickled eggs, onions, and Jalapenos...I love it! You just need a bowl of bean soup to go with it. You may be watching TV by yourself and avoiding open flames but it would be worth it!
