Interesting article.  Wish I had read that before going out to dinner tonight.  Ate at Cowboy Star and they have a butcher shop on the premises.  Stopped in to talk to them before our reservation.  They feature grass fed, grain fed, Niman Ranch, Oregon, C.A.B., etc.  They did explain that the grass fed was only finished on grass but apparently certain customers will only eat the grass fed.

BTW, their stakes were tasty.  The Wild Boar Carpaccio appie was great as well.
