Has anyone ever smoked pheasant or any other wild game bird?

Thanks a bunch. I have a lot of wild game birds in the freezer and wanted to try and prepare them in different ways.  :) :D

Welcome to the forum.

I have not done wild game birds in the smoker but I would treat them similar to most wild game meats, being they are so lean. I would wrap that sucker with bacon.  :)

Welcome to the forum.  I agree with Pensrock......the birds will be lean, so wrap them in bacon to keep the meat from drying out.  I'd marinate some (I like pheasant marinated in Italian dressing and then wrapped in bacon........now that's a personal favorite of mine).  You might also want to try some with just some salt and pepper and then introduce a glaze to them during the last 1/2 hour of smoking.  There's more than one way to eat a pheasant and I suggest trying all you can think of.

My favorite is smoked bacon wrapped pheasant.... AWESOME
