Ok got my first Fatty on the smoker looks good raw. If I can find a camera I will take a pic when is done..  :o

No such thing as a bad fatty! Looks good to me! I try to keep the cheese in the center as much as possible. I have also used the high temp cheese from Butcher Packer. My last batch just had some finely shredded sharp Cheddar and some fresh Parmesan and was fantastic! I mixed the cheese right into the fatty mixture. I love the usual smoker stuff, but fattys seem to welcome whatever your personal choice of spices. When I do a batch of fattys, there is always 3, one has a touch of a sweet bbq sauce mixed in, another with some cajun spices and peper jack cheese, and one just for me with some extra heat!

nascar....I think you just cut it to soon...I always let them rest (like any piece of meat) and that cheese would have been fine..I usually smoke stuff one day...let it rest over night, and eat it the next day...I like to let the smoke settle....

I am sure A LOT....of peeps will disagree with me about it....but...it's what I do....works for us.... ;)

I had to go back and look at this one. Yep there is a smiling face of a happy fatty. Nascar you did nothing wrong, the Fatty looks great. You might have cut it a little soon and the cheese ran. If it tasted as good as it looks. Who Cares if the cheese ran a little? I would suggest putting the cheese closer to the begining of your roll to keep it centered in the fatty next time. Even our mistakes still taste good.

Your fatty looks good, like others mentioned allow it to rest so the cheese can firm up a bit. I have even mixed shreaded cheese with the meat instead of in a layer in the middle. Don't much matter how you do it, it will taste great.  :D

The cheese fell out was meant as a chuckle, mine fell out of the one I put cheese in too....

Looks great Nascar!  I understood the humor behind FLB's comment about the cheese.
I tend to put LOTS of stuff in fatties, so a lot will fall out, run out, drip out.....it's all EDIBLE!!!
