Title: Beef Brisket

First time cooking beef brisket and I am looking for a good recipe and cooking instructions.

Welcome to the forum.  You have been sent on the right path when it comes to contacting WTS about brisket.  He has one minor flaw that we have learned to overlook.  He has this warped outlook that the only wood God ever made is mesquite.  Other than that one irritating little snag, he'a a really good guy and does know his brisket. :D :D

Sorry WTS, just couldn't resist.  Besides, LQ set it up and I'm hiding behind her teabag. ;)

He (God, not WTS) also made kiawe

Oops, forgot - kiawe is a South American (who knew?), Hawaiian (Thank you, God), & Australian (Good on ya, mate) species of mesquite.

In Hawaii we occasionally (when we're feeling yuppie-like) use other woods for grilling/smoking, but kiawe is king!
