Title: Dino bones
Post by: pensrock on February 28, 2009, 08:22:12 AM
Doin some Dino bones today, I'll try to take pics as they progress.
I'm trying out some special 'Duck Rub' on them to see how well the rub goes with beef.

Here's the beef.  ;D

Here's the ribs with the membrane removed and all ducked up.
Waiting for the smoker to pre-heat to 225 F.

Ribs going into the smoker, pre-heated to 225 F then lowered to 210 F after loading meat. Vent wide open, hot water in the bowl.
Going to use four pucks of hickory then four pucks of maple, after three hours total move to house oven to finish.

Going into the smoker.

Well I got distracted doing yard work so they stayed in the smoker for 4-1/2 hours but still only had 2hr 40 minutes of smoke.

Ready to come out of smoker and into a pre-heated oven @ 225 F.

Ready to put in a pan then into the oven for a couple more hours.
Can't wait, I'm gettin hungry!  :)

Anybody besides me notice that in the last picture there is a label on a bottle that unless I miss my guess actually says "Wild Turkey"?  :D :D  Ribs look great.  So does the "turkey". ;)

Pens, your post made me take a second trip to the store. Gonna do a combo of babybacks and Country Style Ribs and now some Dino Bones are bathing in some Yoshida sauce and garlic for a 4 hour bath.
Trying a rub from Knox's spice called "Black Peppercorn Rub" Will report results with pics.

The ribs look really good Pens.  I have never done beef ribs before but you're about to inspire me to give them a try.
