Title: Beef Roasts

We will be smoking a couple roasts tomorrow:  one bottom round and one chuck.
On the bottom round, we smothered it in chipotle peppers in adobo sauce.  We will let it sit overnight:

On the chuck roast, we used Smoking Duck's marinade (olive oil, lemon juice, herbs, wine, etc) and we will let this sit overnight as well:

We will put them on the smoker tomorrow.  We will post the results.

I really like the chipotle in adobo idea seemore! I'm a big fan and always keep a few cans of chipotles in my pantry (cupboard). I use it with my beef jerky these days. I think I'll have to try this! I'll keep an eye out for your results!

Nickld, the chipotle roast is very good, with a subtle BURN to it....
Duck's marinade was perfect for the chuck roast - very flavorful. 
Hey, Duck, where is my dry rub???????  ;)

Wow,  those are awesome looking.  Might need to open a can of chipoltes for my next roast.

Thanks!  They will make some mighty awesome sandwiches and some kind of Mexican dish for that chipotle roast.  Any suggestions?  Perhaps shredded up and put into tortillas and rolled up like burritos?   Give me your thoughts, as I will not be doing anything with this until Tuesday or Wednesday....

Quesadillas and chimichangas both sound excellent.  I was thinking today about making some flautas too........
Maybe I will have to do all three?????

Man they both look great! I think chuck roasts are on sale right now at my local grocery store. I may have to grab a couple and throw them in the freezer. Supposed to rain all week here so I don't anticipate being able to smoke anything. I may prepare a chuck roast with a chipotle marinade just in case. If I can't smoke it I can make a pot of chili with it!   ;D

I was ready to cut up and eat the chipotle roast even before it was smoked/cooked! And the after pics look delish!  ;D
