I smoked up a bunch of chicken breasts wrapped in bacon based on your recipe, and they were fantastic! I served 'em up during the Patriots demolition of the Colts (watch out, Ian--your Steelers are next!) and they were so good folks actually stopped watching the game to talk about how good they were.
I rubbed some of the breasts in a butt rub, and some were bathed in Greek salad dressing (didn't have Itlaian). Used a 1:1 mix of hicklory and apple for 3 hr at 210F, and needed to cook another 30 min to reach an internal temp of 170F. Smoke flavor was subtle but noticeable, and overall flavor and tenderness was superb. The butt-rubbed 0s were especially conducive to quaffing a Bruschi or two . . . [:D]
