Home made fatty mix, cure and 1/3 cup of cold distiled water. Mix the dry with the water and mix into meat.

Those look fantastic Nepas! God a couple dozen eggs to hard boil today. I want to pickle a dozen. Think I will try an egg stuffed fatty or three or four if we get a long enough break from the rain! I think we're actually supposed to get some sunshine this weekend...

Those baby's are going into my regular rotation! I do have to separate the next batch into some not so spicy for the spouse. Everyone else loved them! I was going to try the more traditional Scottish Egg routine next time with a egg and flour batter dipped in breadcrumbs and into the Big Easy after the hickory smoke. I am thinking about crushing some garlic Parmesan croutons and rolling in that. This is fun stuff!

LQ, you have given me the inspiration to make it my next project. When I get my hi-temp cheese order in I will report. Lot's of possibilities, bacon, pepperoni. Anyone ever make there own breadcrumbs?
I do not have a dehydrator yet, but am saving for one.

Thats a high temp food safe smoking screen. You can get em at Cabelas or Bryan at Yard and Pool sells the a different kind which i think is better, Its the screen on the first pic of the fattys before i smoked em.

SS...you got an oven...you got bread...you got breadcrumbs!!! Herb them up however you wish...food process those babies...or...plastic bag and rolling pin/frying pan is good too...smash em up as fine or coarse as you wish!!! Easy stuff...
