Hi All,
In the category of Best Mistake by an Actor Pretending to be a Smoker, I would like to submit the following nomination:
Accidentally bought a <b><i><font color="red">SLICED</b></i></font id="red"> low-salt ham to smoke using the Olds T-shirt Method. I assume the T-shirt will hold it together while it smokes, but: Is it still worth smoking, and if so, should I modify the approach at all? Was planning to start it tonite at midnite and take it off around 6-7 AM tomorrow.
No excuses for this one, except that I had just received my shipment of Dizzy Pig rubs from Big Smoker and was in a rush to pick up my meats to start using them . . . [;)][:D]

I think you will be O K using the T Shirt method. Keep the shirt tight around the ham. It will be pretty much the same as using a netting. You could also tie it with cotton twine if you think the sliced areas are not holding together well enough.

I bought some pre-sliced ham on sell and did the t-shirt method on it. I first tied it with some butchers string then the t-shirt real tight. I believe it will work fine.

Phhhew! Silk purse out of a sows ear again. Thanks to all of you (and to Olds, who e-mailed me offline). At the stroke of midnite the sliced ham goes in the BS. In a few days I will let everyone know the results . . . [8D]
BTW, it says a lot about this group that I can get 18 people reading the post and 4 (well, maybe 3) thoughtful replies within less than a half hour![:D]
