Title: Corned beef
Post by: westexasmoker on March 18, 2009, 08:01:08 AM
Picked up a pre-made corned beef last week for St. Pats day, they were on sale so what the heck!  Almost a 4 lb'er resting while the smoker comes up to temp!

4 hours total in the smoker, with 2 hours of mesquite

Then 1 hour in the BE, to crisp things up

Then 1 hour in the hot tub, and FTC for 2 more hours!

Sautaed onion in butter with some salt and pepper, 1 bottle beer, 6 cups beef broth and covered....Temp in the smoker was 220!  Turned out very well, not as good as a homemade one, but still most excellent!  Thanks!

Questions,

What is your BE?   Some other grill?

And the hot tub, back in the smoker?

Yes, I'm doing one tomorrow, so some research.

BE (or more commonly, TBE) refers to Char Broil's Infrared Turkey Fryer - The Big Easy.

Ah, then the same effect might be seen on my Ducan over power cooker.

"a purist on St. Pats" is a person who cleanses the spirit at early mass, has a potato for breakfast, dedicates the rest of the day to massive consumption of Guinness & Bushmills, and wonders why all those other idjits are so ridiculously dressed.

We're used to everything being expensive in Hawaii (the Price of Paradise) but at least we get decent deals on corned beef in March ($1.20-1.50 per pound) and turkeys in November (about $.30 per pound).

I live in Kaneohe on the windward side of Oahu, about 10-12 miles NE of downtown Honolulu.
