did a few stuffed shroom caps,
nothing really fancy but they were warm and tasty.
started with some boneless skinless chicken thighs,
rubbed them with greek seasoning and grilled.
then chopped up two large thighs and a few olives and mixed in some garlic

about 10 minutes on the grill and topped with some smoked cheddar
and cooked till the cheese melted.

If you want to kick them up a notch, try adding some coarsely chopped garlic and wrapping them in bacon. If you have a Big Easy, you can put about six on a rack and "fry" them for about 30 minutes. Unreal!
