I have huge temp. difference between ( BDS shows 255) but maverick shows 179. What i have to believe ? I don t want to overheat my first pastrami :(

Where do you have the probe for the Maverick?
Typically you want to know what the temp the meat is being exposed to so you usually put the maverick cabinet probe at a level just below the meat. Not right under it but of to the side so it doesn't drip on your probe.
If you locate the probe above the meat it will be influenced by the meat and read lower.
