Title: Rolled Porkloin Jerk

Been awhile since I jerked a porkloin....so time to do one!  4.95 lb loin, need to trim a bit of this fat away and then butterfly it twice in opposite directions so it lays flat

Got the babypoop mixed up...Jalapenos, onion, garlic, mustard, splash of lemon juice and some rub

Slathered loin, then rolled up tied with butchers twine and slathered again.  Into a ziplock bag to rest in the fridge overnight

Out of the fridge, smoker up to 220 hit with 3 hours of the magic wood..after 5 hours total in the smoker, looking pretty good, IT was at 137

Ususally I would have left this in the smoker until I hit an IT of 150, but thought I'd try something different...off to the BE!

After just over an hour in the BE, time to rest for a bit.  I forgot to take the IT here, but I think were done!

Mmmmmm yummo  ;D

With this modified atkins i been doing for 2 weeks, i could eat allot of this. Great loking wts.
