Title: What's Smoking - Weekend of 4/4/09?

Bah hum-bug, nothing to smoke for me this weekend.  I have to prepare for a big cook the next weekend.  Fundraiser for Project Healing Waters.  Close to 100 people - hopefully.  On the banks of my "home" fly fishing waters.  Calls for the Traeger and the Bandera.  Probably won't need the big guns.  It will be an all nighter with a few briskets, small clods and butts.  What about you - what's smoking at your house.  At Wildcat's house, I hope it is just your Bradley.  Good luck man!

8 lbs of pulled pork, Smoking Duck flavor

5 lbs of pepperoni sticks, modified Rytek recipe

And maybe some jerky on Sunday depending on the weather.

I've got 32Lbs of pork butt in the brine.

I also have 15lbs of eye round that will be jerky.

I picked up another pineapple, this one is going to get candied. I've been working on the recipe and process.

Oh, and some country style ribs that have a destination TBD.

60 lbs of kielbasa for me.

Stuffing tomorrow night and into the smoker on Saturday morning.

I usually do them in 22 to 24 inch links. This size just fits the big smoker better. I've never actually counted them but I would guess arround... 40... give or take a few.

I'll have to try remember to count them... providing I don't have to many... ahhh... wobbly pops.  :D

I've found that with 32 - 35 mm hog casings, it takes around 10 feet of casing for every 5 pounds of sausage. So I would guess 60 feet.

We should make this a contest. :)
