Is there a list someplace which would show the best pairing of smoke flavors per type of meat?  I'm a newbie, have everything on order, I guess I should be getting some bisquettes....

If you haven't been to the recipe site yet it has some great recipes, also a FAQ section . 

My newest favorite is cherry on poultry.

I looked at my list, and it only had one flavor on it for everything!  ;D  Once again welcome aboard!

I use mesquite for pretty much everything except for:

maple when doing canadian bacon
apple when doing cheese

Welcome to the forum.  Mesquite is my most used flavor, unless I am doing Bacon then its maple or apple.  Haven't tried any others yet.

I like alder or apple on poultry and fish, pecan for sausage, hickory for bacon and pecan for every thing else
