Hello Rock Lobster,
I haven't made a brisket yet, but today I'm making a rib roast. Most of the recipes, cooking times & temperatures can be found in this one totally awesome book. "Smoke & Spice" by "Cheryl & Bill Jamison".It has tons of information on all food groups.I don't know where you live but I got mine from Barnes & Nobles. You could probably get it on line.

RL,

What issues did you have? The Jamison book is my staple, and, although slight compromises need to be made, it generally yields fantastic results.
