I just purchased a Bradley electric (not digital) and last evening cut up a boneless pork loin into chops. All I want to do with them
(depending on your suggestions) is smoke and freeze them. Later cook them.
Your help is greatly appreciated...

With Pork, the possibilities are almost endless.
For starters, I would probably use your favorite rub and smoke them to an IT (internal temperature) of 130F or so, then vac seal and freeze. To eat, I would grill for some nice sear marks and cook to an IT of at least 145F.

There is a rub there called Jan's rub that is good on just about everything...

I like to do a loin with out cutting into chops till after its smoked that way each chop has a nice bark around the edge and the center stays nice and moist.
As FLB has stated is the same way i like to do my chops
