I grew some this year and it's pretty much end-of-season here so I had to use them, ready or not.
Carolyn was kind enough to give me the link below in a previous thread. That thread kinda went OT so I started this one.

I mostly followed the recipe but increased the vodka for the marinade from 2 to 5 TBS. 2 went into the marinade. ;)

I made the salsa and put the eggplant on the grill. About 5 or 6 minutes per side.

I am more of a meat and taters guy, but them vodka shooters sound good.
Take a double shot glass...one ts of salsa...fill glass with vodka...
