AS A REMINDER FOR EVERYONE

Basic Iron Chef rules:

Be creative on your recipes.

It can be as simple as a new ABT or a recipe that would take a snooty waiter in a fancy-schmancy restaurant 10 minutes to describe.

At least 80% of the cook time must be done in the Bradley Smoker, grill or other outdoor cooking method. Up to 20% of the cook time can be done on the stove, oven.

Use any spices or pre-made BBQ sauces, or other goodies as you wish.

The recipe is not limited to just the 3 main ingredients. Your pantry is open and anything is fair game to be used in your recipe. As long as the meat and two other ingredients are in one dish. IE...one bite gets all three ingredients.

It can be breakfast, brunch, lunch, or supper, or midnight snack.

The Ingredients:

The Meat is: Chicken Thighs

The Others are: Onion (Your Choice of color) and Pear (s)

Ok....I just got home today. I'm all in. Gonna have to practice up on my smack talk.

You boys are going DOWN!!! I was just practicing with the Cordon Bleu and the Prime Rib.
I'm bringing the big guns out now.

BTW...... I do have a pear tree... this is so mine!!!! This will be one for the girls.

Well Linda, the ONLY reason you managed to have the success that you have had is because the GUYS were sitting at your door step hand feeding you info on what to do. On this you WILL be on your own, or the chef you have hired at your house. By the way, I have a pear tree, a onion tree, and a chicken tree, so there.

THE GUYS WILL NOT LET "SMOKIN MAMAS" out of the laundry room.

PS. That was a very nice rib roast.

Nevermind the windbags JGW!! The turn in that they are speaking of is the ICB IV Turn in Thread. I will unlock that thread on Oct 30th. At that time you can post your entry. The more information you post the better chance you have of winning the votes. Your turn in should be the Name of your entry, How you got the entry (Recipe you created) and pictures of the process and a final Plated shot. The plated shot will be placed with the other entries for ease of judging and voting. In the post Iron chef Bradley Miss Deb posted some of the prior ICB turn in threads.

Okay...I have read all of this...and...well...uh...I have a number of comments...

1. I like the way the guys backed off, of course, I was doing laundry and dishes, so I could have mis-read some things.
2. Seems like the "boys" are backing out of this challenge...hmmmmm...(gotta think about that one a little more while I iron the clothes)
3. I was just thinking (while I had time to waste while I got the tires changed on my car)...some of the comments seem quite odd to me...but all of my aprons were in the wash...and I can't really think without my apron and mop...

But ya know I'm just a "girl"....

The aprons are on the de-wrinkle cycle in the dryer...so I may have more input later........................................I should be able to think then...please bear with me.  :)

I am so sorry Carolyn. I thought you were kidding. But if you allow me a piece of old country advice. Take about 5 lemons clean them well with skin on. Cut them up , with skin, to small pieces and put them in a pot. Cover them with about one inch of water and bring them to a boil. KEEP BOILING FOR ABOUT 10 - 15 MINUTES and then sqeeze the outcome into a glass.

It would be great if you could drink that, it is kinda bitter and if not, then add a TBS of honey cover your self with a heavy blanket and sweat it out. You will be 80% better in the morning. You may have a side effect of sneezing, but it comes with the terrotery. It works for me every time.

I'm not certain but I'm just guessing it's the swine flu since I had my regular flu shot already.
Woke up achy, chilled and coughing...all at once. But nothing terrible, just annoying.
My daughter got the H1N1 shot at school last week but the schools here have lots of kids sick with it.

Carolyn, I understand that one of the major H1N1 symptoms is trowing up and my understanding if you don't have that, then you don't have it.

I just have to get this off my chest. I hate what those pharmaceutical companies are doing to us to sell their drugs.

Deb, I told you I would gladly join in this competion.  Lo and behold, I finally checked up on it today, and see that the deadline is tomorrow.
As I am making a dish for tomorrow's Halloween Treat day at work, and I am much too lazy to make a grocery run, I am opting out on this Iron Chef competition. :(
What really has got me down about the whole thing is that I cannot really join in on the 10.5 SMACK DOWN since I am not participating. :'(

Well, I'm still working on mine.

Carolyn, that looks great!  You have one of those funny squashes you grew.  Looks delicious.

WTS, I'd love to bite into one of those egg rolls.  They look awesome.

This is day one for me and I'm still working on ingredients.  One of those was smoked almonds.  I went pretty close to this recipe from http://www.susanminor.org/forums/showthread.php?t=435, but added some heat in the form of Chipotle (of course).  I didn't make very many; I've never done this before.  Enough for my recipe and a few tastes.  I had to beat my wife off with a stick before I got 'em cooled, dried and bagged for the fridge.  Pic below.

My nephew has the lead in a high school play that we are going to tomorrow, and then we are having an early Thanksgiving/Christmas at our house on Sunday, since Scott's mom & dad will be leaving for Florida next weekend.
We will be smoking a pork butt and a brisket for Sunday's dinner;  maybe I can sneak something else into the smoker.

You forgot to mention about the OTHER Bradley that will be sitting there Idol. Yes I know you have TWO Bradleys. So now you have no excuse not to get in the ICB. Anyway, things aren't going well.  I put some cold smoke on some cranberries yesterday (Friday) and then upped the temp (140) to dehydrate them.  I left them in all night.  Rain was forecast for this afternoon.  Naturally, when I got up this morning it was raining.  I had a pretty wet OBS and cranberries that were rehydrating  >:(

Deb, yesterday "they" said rain late today and tomorrow.  Now it's rain today and nice tomorrow.  We're having company tomorrow so we planned lasagna in the oven.  Well, at least that will leave the OBS free to continue my ICB cooking.  :D

After seeing the initial entries, I'm glad I didn't enter.  Anything I might have come up with would have paled by comparison (whether I dropped it on the counter or not).  The biggest problem is going to be deciding who to vote for.  I'd use the "how much I drool when looking at the photos" test but my bucket is overflowing already.

Sorta the way I use to judge a hamburger. Hold it with one hand the whole time I ate it and then count the drip drops that ran down my elbow.

This is disgusting  >:(  I've looked at what has been turned in.  Mine won't be ready until tomorrow.  I'm thinking of just throwing all of it into the garbage compactor or feeding it to the raccoons.

There are some really beautiful and creative dishes there.  Pachanga, as usual, has lots of info and detail and I appreciate that.

I guess I just have to live and learn.  I figure we'll all be for the better after the experience.

Arnie I have been asked to hold off for a little bit before posting a voting poll my another member so YOU still have time to post your entry. DO NOT TRASH your entry. I will try and put up the poll before I go to bed around 2pm CST for my 3 hour nap before work tonight. If Not I will post the poll Tuesday Morning.


For those that might complain that I am breaking the rules!!!! I will not tell someone who took the time and effort to create a dish that they cannot enter. This is not about winning or loosing it is about thinking outside the box and having some fun using our Bradley Smokers.


I have been informed that our ICB is not being done the correct way that we should be creating 3 courses with only one item, because that is what the Iron Chef does on TV. This is true BUT, In our Iron chef we only create one course. The Main Course. So we use 3 ingredients. It would be awful hard to create a dessert with a Pork Loin!! The true Iron chef is also done with CHEFs that own restaurants and cook PROFESSIONALLY. WE on the other hand are a bunch of backyard BBQers who are having fun and getting ourselves to think outside the box. The forum would get pretty boring if all we post is pulled pork, brisket and chicken over and over again. I am sorry if we are offending anyone by doing the ICBs the way that we are. The intent was to get us to try something different and do something new and use the Bradley to do it. If nothing more than to showcase the abilities of the Bradley Smoker to ourselves and others who visit the forum.

That is basically why I started the Iron Chef here and called it Iron Chef Bradley and not just Iron Chef because it is different. It has been adapted to fit us. I am open to to change if folks would like to try one ingredient and make three courses we can do one that way. I'm not against it.

I like the format myself.  It's like Chopped which I enjoy more than Iron Chef because with 3 ingredients its a bit more of a challenge to make them work together.

I wish you could postpone it for about 3 days.  With helping my daughter buy her first house, helping my wife get ready for an antique show, working for no pay at the office, working at the fly shop, and the rain at times I could smoke I have not finished mine.  Got some prep work done, but not the smoking.  Someday, the planets will line up for me.

My wife has looked over the list and I have a lot of cooking to do.  The menu for the next few weeks will keep pears, chicken thighs, and onions on my grocery list and the Bradley smoker smoking.

I believe in giving a man a job and then trust him to do the job.  However you handle this competition is Ok with me.  I am just happy to have participated.  It was a very interesting exercise.  Pears are not a staple ingredient in my home, but they will be purchased often from now on.  My jalapeno poppers have taken on a whole new life.  They were some of the best I have ever made.   The chicken thigh drippings intensified the flavors of the beans. The Chile Rellenos were layered in flavors and the pears were a surprise in the salad.  As you stated, this is about stepping out of the box.

I decided to put some further constraints on myself for fun but that was my choice.  I also wanted to see how versatile the Bradley could be.  The rules as you have stated them are fine as far as I am concerned or they can be tightened or loosened in the future.  It is all about doing something different and unique for me.  I also enjoy seeing what the intelligent people of this board decide to create.  This is interesting and entertaining.

As far as leaving the thread open, I am with you, whatever you decide.  I'm not going anywhere.  What are a few hours or days.  It's up to you.  As I said, I believe in giving a man a job and then trust him to do the job.

I am not going to be turning in an entree to this particular smackdown, as I came home from work in a particularly tired and lazy mood and then I deep-fried the main ingredient in the entree.  My bad.
Time to turn in my woman card........
My humble opinion on this competition is this:  this is a FRIENDLY competition between people on this forum who love food:  smoking it, preparing it, serving it.
With that said, if someone wants to create three courses with the ingredients, go for it.  If someone wants to create one course with the ingredients, go for it again.
Arnie, please don't EVER be discouraged if you don't think your recipe "matches up" to others on the Forum.  Ask 10.5.  I almost did not submit my entree as it was not as pretty in presentation as the others.
However, thanks to 10.5, I realized that this "competition" is all about the joy of cooking!  Period.  And of course, the 10.5 smack talk.  ;)
So, I will continue to compete in these contests - when I am not having a lazy day. 
And of course, I will always look forward to the 10.5 SMACK TALK!!!!
In my opinion, every single dish that has been submitted thus far has garnered major bragging rights by their chefs!

It was a lot of fun and that's what we're here for.  All of your entries looked to-die-for.  You're not going to see this stuff on FoodNetwork.com unless they're spying on us. 

I like the one bite gets it all format.  Multiple courses with, maybe, chicken ice cream for desert - I dunno.

I agree the 'Chopped' format is better than the original Iron Chef.  You have three ingredients - make 'em work together.

I'm was just looking at the entries again and they are all awesome.

I have a puff pastry question -   do you think that you could do Carolyn's recipe and freeze before the baking with the puff pastry on the chicken?  If the puff pastry can be refrozen it would make an awesome do ahead freezer item.  If you have people coming over you could pop however many you needed out of the freezer and bake :)

Hi Deb!
Now that I'm an expert in puff pastry (having used this one time  :D :D :D), I think you could do that. 
The pastry has to be fully defrosted, to work with it and make a tight seal around its contents.  I think refreezing it would not be a problem but I think you would want what ever you put in it fully cooked.  My chicken went from the smoker almost fully cooked (and warm) and was finished in the oven during the 20mins of cooking. 
Brushing the egg and water mixture could be done right before you bake them. I don't think they are pretty without it.

Good thing I didn't prepare an entry...finally got my camera from the office on Tuesday, but couldn't find the card reader to bring that home.  I'd have really been ticked if I got DQ'd for not having pics up.
