Hey!
Smoked 3 fillets for 2 hours with Alder after brining overnight and air drying for 3 hours.
WOW!
They could have smoked a whole lot longer but just awesome for dinner with Butternut Squash risotto. Beats smoked trout hands down except that trout is less than 1/2 the price of the Sablefish here in Ontario.
Plus the pin bones were a nuisance but so long as you know you haven't got them all out that's ok....
