I've had some cheese in fridge waiting for the time that it would be cool enough to smoke.
Woke up early this morning for some reason and walked outside and found out what
the reason was. 45 degrees and dry. CHEESE TIME!!!

I hope to be able to smoke for 4 hrs with apple before it gets too warm.
I flipped and rotated (I just can't help myself) at the 1 1/2 hr mark just incase I don't get to go that long.

two hours of smoke should be more than enough CRG maybe three
I'll be happy if I get three. I am at the two hr mark and cabinet temp is around 85.....looks good.
I usually go for 3 hours on cheese. CRG, don't forget you can crack the door open to help hold the temp down or do like I did one time. I actually opened the door and fanned it for a minute or so to cool the tower down. There's going to be plenty of smoke, trust me.

'Rat Trap' ???
Am a happy camper so far. I got 3:20 of smoke on the cheese before I shut it down.

I nibbled on a piece and thought it tasted good. Can't wait to have a smoked grill cheese sandwich.
Now cool down time and will vac seal for the waiting period.

I like Caney, the dang stars are just not lining up for me right now. I ordered a cold smoke
adaptor on Sat, finguring it would be here by Friday. I had just posted the pic of the smoked

Looks good CRG. Certainly the right idea, load up the smoker. I've found that when smoking a chicken, the pucks cost more than the chicken!
I have limited experience, but like the result better when the cabinet temp is 80-90 degrees. It seems to me that the cheese doesn't take as much smoke when done really cold. Nicer flavor and color when done at the higher temp.
Yeah, I flipped and rotated too. The racks can leave a nice pattern on the cheese.

Here's a hint for you on your cold smoke adapter. Try connecting your smoke generator to it instead of smoking all those cigars that are shown in the picture laying next to it. I can just see you laying next to the adapter, drawing on a cigar and blowing the smoke in the adapter! :D :D

When I was younger only people that bought rat trap cheese was poor and people that had rats.
We didn't have rats, but I ate a lot of rat trap cheese. It was hard, sharp, full of gaps (air holes).
Todays version is nothing more than a name, part of that is for the wedge shape. It is a cheddar.
Everybody got vac-sealed and put to rest for awhile.

When it is ready, I want cut this cheese up and give several sections away to family. I wll cut up and revac seal.

Wow! Kewl, maybe it last forever. I know the young man that stocks the cheese and he went to the back room and got me some that just came in and exp dates were like dec 2010 and jan 2011.
Do you think there is a maxtime when the smoke won't penetrate anymore?

I'm sure there is a time when the smoke flavor has been evenly distributed in the cheese and then no more flavor movement will take place.

Several months, with no problem. I think after a month or so you will not see any difference in taste. I like a min of two weeks, but have used it in as little as 7-10 days.

Same here. Just opened a pac that was done 10 months ago. Last of it so I went to Sam's last weekend and loaded up with 10 pounds of Cabot's white cheddar and around 6 pounds of Gouda to replenish the supply.

I have found some colby jack in the back of the fridge (in the man room) that was almost a year old and it tasted just fine. Didnt know it was back there till I cleaned the fridge. Heck its my fridge and I'll clean it when I want to, the wife is afraid to open it cause she never knows what might be in there.

Nope. did good actually. That bottom rack went to the top half way thru. Have you ever smoked cream cheese?
Holy crap 10 months to a year. Those vac's must be sucking them down to near zero oxygen. That is amazing. That cream cheese sounds real good. I am going to see if a higher temp will infuse more smoke flavour for me. Man I love this forum.

Age - I've heard a theory that the smoke helps keep it. Between the smoke and a vac seal, it'll probably last a long time.
Cream cheese - I'm going to try some next time. I was thinking of putting it on a lightly oiled screen on a rack toward the front of the OBS. I'll probably wait until it's in the 30's outside. That stuff gets pretty soft just sitting on the counter when it's 65 in here.
Arnie, I kept it to the front ang was surprised that there was NO sticking, getting caught in the rack.
A few of the thinner cheeses did that, the cream cheese did not. A cpl of the smaller pieces were a
mexican milk cheese, (the 4 pieces of Queso and they held up well)
For some reason once cheese is smoked it lasys much longer in the fridge than unsmoked. That is if you can keep it hidden that long. ;) ;D

I smoked this cheese and vac sealed on wensday last week. Sunday, while I was at the camp, my oldest comes to the house to help his Mom. He is a fridge raider.
He tells me on Monday evening that the cheese I smoked was really good. I just laughed my butt off and told him if he liked it now then after it has age long enough he would LOVE it. Went to the fridge and re-vac the open cheese.

I smoked this cheese on the 4th and told my wifie that we had to wait for 10 days to eat it.
Everyday when I am home there is a note by the coffee pot telling me how long the cheese has been vac packed.
This morning the note said "It has been 20 days since you smoked this cheese. I am cutting this stuff on Wensday"
So much for the 30 day mark.
Maybe you need a fridge with a lock or some sort of 0y trap. LOL

We had a cheapo dinner tonight. Frozen pizza. They were 5 for $10. This one had pepperoni. I added more pepperoni, sliced black olives, sliced fresh tomatoes, EVOO and shredded smoked mozzarella. It was GOOD!

Just opened the first packages of pepper jack & cheddar I smoked on November 19th (couldn't wait any longer). Mmmmm good (and will only get better)!
Only problem is that I'm guessing SWMBO will appropriate a bunch of it for Christmas gifts (My own damn fault - I shouldn't have vacuumed it in convenient half-pound packages). Fifteen pounds could disappear pretty quickly but I guess I can always make more.

When my kids were young, wifie took them to get a burger and when she ordered, she told the lady she wanted to cut the cheese. Kids went crazy laughing, she didn't know what was happening got embrassed and drove off when out finishing her order.
