Title: Slicing?

Anyone know what machine they use to "preslice" lox.  I want to give some as gifts but It would be a better presentation if it came vacuumed and pre sliced.  Any thoughts[?]

I have used many slicers, and I cannot fathom using one on fish. Where the blade meets the sleave (the beginning of the cut) the cut is not a head on slice but one of almost 45 degrees. Thus the wheeling action of the blade is pulling the meat after the cut begins. I maybe wrong but I just cannot see using a meat slicer.

If I want to slice lox thin I would use a razor sharp 14" hand slicer. These are thin walled and believe me you can sharpen one to shave with.  I know I got two!

looking for one myself, also need to find the gold board , to place on like the stores use, its a gold waxed paper borad, if we cant find a slicer, we could use a good sushi knike and slice it then put on the gold board then vacuum seal it,

I haven't started to look for the board yet.  Let me know if you find a source.  I'll keep working on the lox slicer.  I have some friends at the CIA in Hyde Park (my home town) someone there should be willing to share the info.[:(!], or else!

I have taken a few continuing education courses at CIA, and I taking one this Saturday; Cuban-American Cuisine. Great bunch of people at CIA. If anyone can help, it's someone from that institute.

I got the slicer machine info, although it's not easy on the wallet.  The company is Gerba and the smallest machine will do 150 lbs per day, minimum.  The cost 20,000.   I'll take 2[;)]  Here is the website, it's interesting.  www.intlsmokingsystems.com/gebaslic.html

I do believe you would be much better off if you went and got a good 14" hand slicer... from 40.00 to 90.00!

However, if you bought one of those machines you would have bragging rights!
