Weather is not friendly so I am nto going to be able to smoke these and wanted to get some ideas for what to do indoors. They are for my wifes work thanksgiving lunch tomorrow, I was going to brine them this evening in some combination of kosher salt, rosemary, brown sugar, thyme and whatever else I come across in the cabinet. In the morning, was going to just slather with evoo, salt & pepper and throw them in the oven. Any ideas on temp? Any other suggestions on a brine or rub?
