I just did a Brisket with 4 hours of maple last weekend. Best brisket I have ever had. I think next time it will be alternating maple and hickory.[:p]

Have fun.[:D]

Ben,

Great choice.  This is my rating for brisket.

1.Pecan[:p][:p][:p]

2.Maple[:p][:p]

3.Apple[:p]

I only use four hours of smoke on anything I do.

I was very tired of hickory, but I find myself wanting to try it again.  I beleive hickory works well for veggies like peppers and bakers.
