Title: On the 10th day of Christmas .....

My true love gave to me .....

1 10 pound prime rib   ( Sunday delayed Christmas dinner.  Christmas day will be seafood )
2 brisketts    ( 1 will be pastrami, 1 will be corned beef.  I have a kit I need to experiment with I have had for a couple of months )
1 roast for making salami  ( semi cured and cooked )
2 giant pork belies  ( 1 dry cure maple cure and 1 will be wet as I have not done a wet cure yet )
and bonus ribs that were cut from the belly

You guessed it.  Just came back from the meat wholesaler with a trunk full

Not sure where you are gettinig your meat from but you should check out Highland Farms in Stoney Creek
Excellent source for briskett, I think I justy got 3 times the weight for less than what I would pay in total at Costco
Pork belly is wholesale priced and the ribs are pratically free

I just got home and I feel like I need go back again ....   LOL

They will cut anything you want, any way you want it.  They even have cures and casings and seem to understand smoking
