Well I finally got a few minutes to try and make some venison snack sticks. We stuffed them yesterday and are smoking them in a snow blizzard.
Grinding up the deer and pork butt.

Smokin in a blizzard, aint this weather great?
We are holding at 16 F and partly cloudy but no snow.
Cant wait to see the finished product.
We put the smoker in Dad's chicken coop ;D

I got tired of dealin with mother nature and moved mine in the shed for good.
We put the chickens in the Big Easy!

I got a Big Easy for christmas, that baby works great.
What ratio of deer to pork did you use ? I use 60/40
yea about 60/40.
I love a roasting hen patted with a little EVOO and rubbed with some dry rub then off to the BE... The most juicy chicken you ever ate.

I've been rubbin the bird with butter smokin at 250 F then pull out at 135 F and drop in the hot BE and pull out of there when the IT hits 170 F
Juicy and smokey.
Nice touch with the smoke, I'm too lazy and just plop it into the BE and get a beer 8)

That stuffer looks just like mine but the shafts come out closer to the front on mine. That stuffing tube looks just like the one I have too. ;D

BTW the snack sticks came out perfect according to my other brother John... I was not there for the finish, I scampered home before the 12" of snow piled up.

I've never been a fan of snack sticks... till now :o dang these are good and my wife loved them. She took one bite and said "what are these made of?" I said deer she grinned and said "I have some deer in the freezer!"

We did learn that constant force on the stuffer piston gives much more even filling of the casings... JT wanders off looking for a gear motor.

Them snack sticks look gooood.
Those wont last long, you better get more deer out of the freezer and whip up another batch.
About the best snack sticks I have had. And your right OU812 they are about all gone. We finished a whole bag of em yesterday.
