Since we don't have an Italian forum, and this dish is primarily cheese, I figured this is the best place for it.

I smoked an extra chicken a couple of months ago & meated it out, vacu-sucked it & tossed it in the freezer. Here's what I did with it:

2 cups grated parmigiano-reggiano
1 1/2 cups shredded mozzerella
5 1/4 cups ricotta
6 eggs
minced parsley for color
2 cups shredded smoked chicken

Makes approximately 36 manicotti.

Mix & pipe into manicotti shells that have been boiled for 5 minutes. After stuffing, freeze. To cook, splash baking dish with spaghetti sauce, lay in manicotti & cover with balance of sauce.

Bake at 350F for 45 minutes and allow a 10 minute rest.

Chez,
This looks like another delicious recipe. Are the amounts correct? (ie:5/14 )
I'm assuming 5 1/4 cups.
