Ok, I got my bradley in mid December...since them we have had over 250 inches of snow...I have smoked almost every weekend...now it is spring time...and it is fishing season...

You just cant leave the smoker for 7 or 8 hours to go fishing...but now I need smoked meat!! I am convinced it is the reason I never got a cold all winter!![:p][:p]
My chicken q's take about 5 hours and so do country style ribs...if I smoke in the morning...well then i have to drink when I smoke[:D][:D][:D]...one an hour is what chez perscribed[:I][:I]...so I got a delimena...you make limenade right!!! Ok...does that mean I need to start drinking linchburg lemonaide...or start fishing...oh the decisions!!
This things is a addiction...or may be it is the beer!! Chez's advice on a beer per hour rules!! and regardless of what anyone says about him...I still like his advice!![:D][:D][:D]

One an hour is what the typical liver can handle. My problem is that once I start drinking I have to continue drinking or I fall asleep. As long as I keep drinking at least one an hour I will stay awake, but if I stop it's nap-time. It's not so bad to keep on drinking until bedtime if I start at 6 or 7PM, but it tends to keep me from having a beer at lunch!
Anyone else notice this?

The simple solution here is: Any recipe can be modified to your own taste. Experimenting is so much fun. I have now found the perfect solution for my needs. No minimum/ no maximum. Hot days require more liquids so you don't dehydrate. Cold days require antifreeze to keep you warm. So ice cold beer, or a few bourbons, is my recommendation and as to the amount? Who cares............Roll the dice!!! Chez has all sixes on his dice!!!!!!!!!

Andy, the only quibble I have with the B thing is that I can't think of a way to include the most venerable of all whiskies: single malt scotch! The best I could come up with is that the ancient Gaelic word (help me out here Manxman, Muirhead, and others with some Gaelic background) for whisky is Usque <b>B</b>eatha, which means "water of life", which whisky definitely is! Usque Beatha morphed into usquebaugh, which was subsequently shortened to usky, which in English then became whisky. Of course, there are great malt whiskies that start with B, like Bowmore, Balvenie, Bruichladdich, Bunnahabhain, Bladnoch, Brackla, Brora and others. Now THAT makes me feel better abut the B thing.
BTW, scotch and beer are a perfect drinking combination (not mixed together, but consumed separately of course!) because they are both malted beverages.
And just to connect this post to some other aspect of smoking, whenever I make a smoked fish pate, I always include some scotch in it. The peatier and smokier the scotch I, the better the pate is![:p]

Most Whiskey is considered Bourbon Whiskey!! So since it has the word Bourbon on the label you can drink your Whiskey.
If it is Beam for instance..that is Whiskey..but has the word bourbon on the label...trust me on this..

I am just trying to make him happy. My bottle of Woodford Reserve does not say blended..I dont think...and it is probably the best bourbon out there!! With a smokey flavor to boot[:D][:D][:D][:D][:D]

Apparently usquebaugh is a transformation from uisge beatha (Scottish Gaelic) and uisce beatha (Irish Gaelic), both meaning "water of life" as you said. A few other things have to be done to consider Bourbon Bourbon....barrel types, flames and such. JD is charcoal filtered...which means it cannot be bourbon by definition...Beam is bourbon whiskey...it does not meet all the criteria of bourbon either....but it is great mixed with Sprite or Tonic Water...1 part Sprit...3 parts Beam. the old bourbon county actually was much larger..If I remember correctly it also went into Tennessee as well a bit...they modified the rules after proabition to Kentucky's new bourbon county...which is ok...becuase the best bourbons are small batch bourbons from that area...you can actually do a day tour of a bunch of them...which gets you plowed...The thing I like most about Bourbon...it is truly an american drink. Very few beverages got there start here...and I like that.
I guess I will have to stick with ginb.
Anyway, back to the original problem, do what I do: smoke some jerky and take it with you on the boat when you go fishing. Best of both worlds!
