does anyone got a brine for sturgeon and smoke time

Welcome, Mike!  I don't hav anything specific to offer you, and a search of the Forum didn;'t turn up any sturgeon-specific brines or recipes either.  I would suggest going to the FAQ board listed in the Sticky at the top of this forum and look at the several brine recipes listed there for salmon and other fish.  Pick the one that you think will be best for sturgeon and give it a try!  Let us know how it goes, too.

Welcome.  I've done a fair amount of brining and smoking all kinds of fish.  I've never done a sturgeon but would use the salmon recipe in the forum.  Ever try tuna - outstanding!

Shoot White;

I use that new fangled Tuna that comes in a foil packet and dump my brine in there and fold the top over then staple it for convience.

Welcome, Beth.  I couldn't locate a brine specific for sturgeon, but I really agree with the others that one of the simpler salmon brines would work just fine.
