Title: 1st ribs in the Bradley
Post by: ronbeaux on April 17, 2010, 03:52:24 PM
No, I didn't just jack the temp guage all the way to the right and walk away.

I carefully rubbed these with a little mustard and coated them with Ritter's Just Sweet rub. Put them in the OBS holding at 250 ish and just let them cook for about 4 hours with about 2 hours worth of hickory pucks. Wrapped them up in foil with a little turbonado sugar and Sweet Baby Ray's. I left them wrapped for about 45 minutes. They were already tender before I wrapped them but I wanted to get some more flavor sunk into them. Unwrapped them and let them cook some more open to set the sauce and here they are:

NO smoke ring but I knew that going in. They were fantastic!

The problem I see with those ribs is they aren't at my house.

Thanks guys!

I'm guessing that's why they won't let us use legtricity at comps???????  These were first class on taste and texture.

Here they are cut and on the plate:

Served up with some rutabaga and collard greens

Interestingly enough, I don't either. It's kinda sorta like, uhh, well, a turnip. I prefer a hicama.

I heard about a good Jicama salad recipe last week...  (while looking at piles of Jicama in a Mexican grocery store)

I'll dig it up.

I think it's a Mexican Potato...
But harder than Idaho potatoes..

In one of my previous lives, my favorite Italian produce dealer tried to sell me some...
"You want me to get these KY folks to eat WHAT?"

If you ate that green stuff, would it cut down the room for more of those most excellent looking ribs?
