I just broke out some Swiss cheese I smoked in January.

To be honest, I don't remember. I think Hickory, but it could have been maple.
I'm not a swiss cheese eater but my sister and others love it so I make it a few times each year. I normally use apple wood and have never got a single complaint other than..... is that all you made? ;D ;D ;D
From what little I know about smoking your own cheese I think it's too hot right now to even try it yet. But reading about everybody's smoked cheese has gotten me on a smoked Gouda kick. I think I'm addicted? ??? ;D
Has anyone tried the cold smoker that Bradley sales? Is it worth the money or time?

Mine works very well and is good quality except for the hose (which should be sturdier). I've had to jury-rig it a time or two and will eventually have to replace it (although it's an odd diameter that's not always easy to find).

I use a cardboard box and dryer vent hose. Works great and a lot cheaper.
