Title: Tuesday Night - Chicken Fried Pork Cutlets

Monday was wings.  I'll try to get a post up for each weekday dinner this week, for whatever it's worth.  No time for smoke/low/slow during the week.

The thin sliced pork cutlets were hit with the 48 blade needler (Jacquard).  Then soaked in CT for about an hour.  Coated in plain bread crumbs and left to rest in the fridge for 20 minutes or so.

I used peanut oil (high smoke point) in a large cast iron skillet.

The sides were Syracuse salted red potatoes and zucchini sauteed with a chopped up canned Jal and associated carrots and onions; the heat there was just right.
