We have a cook book that now has been in the family for about 100 years. It is titled:
The Boston Cooking-School Cook Book, by Fannie Merritt Farmer.
Below is a recipe of from it that I have enjoyed many times over the years. In fact I'm cooking it now!
I make a gravy from the juices when it is done. I server it over noodles with horseradish on the side. [^]

Fannie Farmer's book is a classic & chock full of great information. I got my copy (reprinted in the 60's or 70's) at a charity auction within a group of 12 cookbooks. Afterwards, a woman came up to me & offered twice what I paid for the group for just that book. Makes me wonder why she just didn't bid more.???
Exellent read for anyone that can find a copy or even get it at your local library.[8D]

I have a re-print of the 1896 version. Looks like the recipe is exactly the same. I am going to have to try it.
