Title: Wrapping ribs in foil after 4hr smoke

I tried this last weekend and probed w/ Guru, the meat temp stayed at 185+ for at least 2hrs but would not reach 190.  Does this seem right?  I pulled after 2hrs and ribs seem to fall off the bone even though temp never hit 190.  Does it effect the probe temp when meat is in foil?

If the probe is positioned right, the foil should not interfer with the reading. The sensor of the probe is located at the tip.

I don't do ribs that often, so I am not familiar with how long it should take for ribs to go from 185 to 190. What temperature were you smoking at? When you used the guru, did you have the ramp mode on? If so that would definitely slow down the time for the temperature to go from 185 to 190.

Ramp definitely off.  My temp was at 200.

I would recommend cranking the temp up once you put them in foil. If you put a little sauce or juice in the foil with them they will stay nice and juicy. I have found using foil after the initial smoke to be the best way to do ribs. If I don't the ribs tend to get dried out.
