I tried smoking pistachios for the first time when I was hankering for a snack last night.

I used Nepas recipe as a guide, but used my Dr. Pepper 'cue sauce and my Bubb Rubb since I had those laying around and I can't remember what grocery store I saw CT in last (if I even saw it at all).  Smoked for 40 min. with a couple hickory pucks.  Darn tasty and I've been snacking on them all day. Now I feel sick but I'm still looking forward to making jerky this weekend (buy one get one free london broils!).  I didn't cook them long enough so the sauce didn't harden as much as I would have liked or caramelized as much as I would have liked but next time will nail it.

I smoke mine for about 2hrs then put in oven on about 180* to dry them out.  They get even better after a few days in a zip lock

I was happy with the amount of smoke.  I like it a little more subtle.  I think all they needed was 20 more minutes in the cabinet at 250ish to really knock it out of the park and give it a good roasted flavor.  The Bubb Rubb doesn't really take off until the brown sugar melts and its barked up a bit.  Either way, still tasty.  If I don't go the bbq flavor route next time, I'm thinking of trying a chili lime pistachio recipe that I've been batting around in my head all day as I compulsively ate these at work.  I saw the citrus pistachios on the recipe site so I'll have to compare some notes.
