Title: Sweetwater Brined Roast, Pastrami and SPAM are SLICED!

It has been so HOT here lately, I started this Smoke late this afternoon.

8 1/2 lb Sirloin Roast brined over nite in Sweetwater BBQ Bath Smoked Habanero brine.

Drain the brine and smeared the spices back on to the Roast and added a touch of Sea Salt and Malabar Black Pepper

Almost 3 lb of corned beef brisket rubbed according to the recipe site.

2 Links of Holmes Smokehouse Sausage (1) Jalapeno (1) Original

3 cans of SPAM (1) Vac pk with Maple extract (1) with Slap Your Momma cajun seasoning and (1) with Double Barrel

(DB) Original Seasoning.

Going with two hours of Pecan and then 2 hours of Apple.

Some say that smoking processed meat is a waste of time. Not true I have smoked a ton of turkey kielbasa, spam with great results. Spam needs a kick so I use a rub from Dizzy Pig called "Swamp Venom". Little bit of heat with some flavor.

Gaaak, arrgh, you couldn't pay me to do anything with spam. My mom did horrible, horrible things to spam under the guise of edible food. Like slice it and fry it, mush it up with mayo and pickle and put it between bread or just let my brother eat it cold. Dang I am going to have night terrors again. I know some folks love the stuff and some even worship it but to me they just wasted energy proceesing it.  :(

I may be an odd one here but I loved fried Spam as a kid.  Wife just about cut my n*** off first time I brought some home in college.  Have not even thought about it since.  So CRG, I have to know, how is smoked?  What temp would you take it to to make sure it is done?

Holmes sausage rocks.  Only kind I will cook.

Sliced and fried Spam and cheese Sammies on fresh bread are AWESOME!! Smoked with some rub on them is another good way to eat it. Good for you CRG

I was quite surprised when I opened the cans. When I was young, the cans had like a church key to open them.

If you lost the key, you were SOL. Then it had this jelly goo in them.

These were very clean, no goo. As you see them is how they came out of the cans.

They are a cooked food so I just want them to gather some smoke.

They are on the top racks and will let them ride out the 4 hrs of smoke, maybe.

I'll vak pak them for a cpl of days and see what it taste like then.

You smoke/cook them for 62 hours and then use them to pound nails. :D :D :D

Yes Sir! When I pulled it out off it's hiding place and stuck it on the counter, there was

quite abit of chatter from Wifie. She wanted to take it and put it in a food donation box.

She MADE me rinse out the cans and take them to the outside trash can! ;D

Sometimes she ain't no fun.

I think I'll take a big ole bite of SPAM and then go give her a juicy spam kiss! ;D ;D

Well I must join the list that happens to love Spam.  Raw, fried, grilled, you name it I like it.  Gonna have to smoke some soon.  Thanks for the idea CRG.

What IT did you take the roast too?  I've got a big honking beef roast clod in the freezer and I am aching to give it a whirl.

My Fam doesn't like it rare so I took this one to 147 before FTC.

I took a slice off of it this morning before It went in the Fridge

and it has a nice pink tone to it.

That Sweetwater Habanero Brine has some "PUNCH" to it.

I ate one of the ends and it was more crust than meat. I know that

as I slice it it will tone down some.

Growing up, my Mom fixed Spam .... battered and skillet fried.

Now .... that is a artery buster. But as a Kid, I thought I was eating Prime Rib.

These stayed in the "Smoke" for 5 hrs. ;D I'll cut one tomorrow.

I don't know what the big aversion to spam is.  It's the tastiest potted meat I've experienced.  I'm not a fan of it raw, but if it gets a good pan fry it's just like a ham steak.  We had a spam cook off at work and I came in second place.  I felt like I should have won, but what are ya gonna do?  some people can't handle the 5 fingers with spam.

*5 fingers = home made mac and cheese with a couple lbs of italian sausage and loaded with jalapenos, onions, spam, garlic, hot sauce, and anger.  It's sadistically awesome junk food.

I'm going to have to smoke some spam and sneak it into something I feed my friends.  Maybe photograph the results.

Great job, CRG! Everything looks fantastic. Looks like the beef is cooked perfectly.

I've got to throw my hat into the spam lovin' ring. After growing up watching Monty Python I thouht it was a joke until I saw it in the store and tried some a few years back. Loved it! I mostly eat it sliced and fried as a breakfast meat. Need to try it smoked sometime.

They are both great, but two different taste.

The sirloin roast is gonna make some great hot sammies or just

cold sandwiches.

Can't wait to give it a whirl in the Sammie press.

My Favorite Spam was the one with the Double Barrel seasoning. I actually didn't know if this would

work cause Salt is the first ingredient of DB. If I do this again and I probably will, I will slice the Spam

after smoking it and then vac pak it for a rest in the fridge. The Spam meat is so condensed that it

didn't get enough smoke flavor for me. And maybe fork the spam before rubbing and smoking it.

The Pastrami was just ungodly good is just about gone so I have another going in the smoker later today.

Might work! That spam was in the smoker for 4 hrs and it still has plenty of moisture in it.

All of the Spams were good especially after a 10 second nuke job, IE warm.

I made a variety pak to give to my Mom, I know she will love it. She's an old Spammer.

Oh man does that Spam and pastrami look good.  I'm sitting here listening to Creedence Clearwater Revival with a refreshing Rocky Mountain beverage and the moutains are blue and you just made me hungry CRG.

This might be a little far fetched but sounds like the Spam holds moisture well so what if you sliced the Spam BEFORE you smoked it?  Sliced, rubbed and into the smoker.  I'm crazy enough to give it a shot and CRG, I d@mn sure know you are too! ;)

It all looks great.  Pastrami, is there anything better?
