Title: First Fish Smoke

I am wanting to smoke some fish in my OBS, I was thinking about Tilapia, since it is fairly cheap and on sale this week.

Do I have to brine the fish or can I smoke it out of the package (after thawed)  ???

What temperature and for how long  ???

I've never tried Tilapia.... but I think it would be best to put some parchment paper under it so it doesn't stick to the rack and doesn't fall through when it starts to get done.

Probably 150F for about an hour?

Like I said, I've never done it but let us all know how it turns out.

Basa is cheap down here in Oakville/Mississauga and it almost the same.
